Natural Process
Natural processing is one of the oldest methods of preparing coffee after harvest. Rather than removing the fruit immediately, the coffee cherries are dried whole, allowing the beans to remain in contact with the fruit throughout the drying stage.
During this time, the cherries are carefully turned and monitored to ensure even drying and reduce the risk of fermentation or spoilage.
This method is particularly well established in Brazil, where the climate and growing conditions are well suited to controlled sun drying.
Natural processing can help create coffees with greater sweetness, body and depth, while also allowing more of the character of the ripe coffee cherry to influence the final cup.
