Mark, Coffee Roaster for 8+ years and chef for 25+ years
The first—and perhaps most important—step in choosing your coffee is understanding the flavours you enjoy.
To make it easy, coffee flavours generally fall into a few key categories: fruity, floral, chocolatey, or nutty. Identifying your preference among these can be a great starting point.
To help you out, here are a few of our top picks for each flavour profile:
Fruity – House Blend / Ethiopia
Floral – Monsoon Blend / Uganda
Chocolatey – Machu Peru / Brazil (also Decaf Brazil)
Nutty – Espresso Roast / Machu Peru
Many coffees, even single origins, offer a delightful blend of flavours. For instance, our Machu Peru coffee starts with a rich burst of chocolate, followed by a lingering nutty aftertaste. You can find a more detailed breakdown of the flavour profiles of our coffees at the bottom of this guide.

The roast level of your beans significantly impacts the coffee's flavour, body, and acidity.
Light roasts are known for preserving the beans' natural essence, offering vibrant, nuanced flavours. However, the higher the density, the more challenging it is to produce a perfect batch, whether in roasting or brewing.
We have found from years of experience that lighter roasts do not perform well in professional bean-to-cup machines and often brew better with filter methods or traditional espresso machines.
We spend time developing our coffees, often sending our beans to the country's top coffee mouths for feedback. Once we have tweaked each roast to perfection, we can be confident that the flavour profiles can be enjoyed no matter the brew method.
Darker roasts deliver more intense flavours, particularly well-suited to milk-based drinks like lattes and cappuccinos, where their boldness shines through.
To help you out, here are a few of our top picks for each roast profile:
Lighter Roasts – House Blend, Uganda or Ethiopia
Medium Roasts – Brazil or Machu Peru (also Decaf Brazil)
Darker Roasts – Espresso Roast or Monsoon Blend
Not surprisingly, single-origin beans come from a single region, offering distinct flavours that reflect that area's unique characteristics.
On the other hand, blends combine beans from various regions, and when roasted well, they can yield a balanced, harmonious blend of flavours. Blends often feature South American beans as a base, such as those from Brazil, Guatemala, or Colombia, which are then mixed with other beans from around the world to create a unique, crowd-pleasing flavour profile.
Consider whether you are in the mood to explore a specific region's pure, unfiltered taste or prefer the versatility and balance of a carefully crafted blend.
To help you out, here are a few of our top picks for each option:
- Blends – House Blend, Espresso Roast or Monsoon Blend
- Sngle Origins – Brazil, Machu Peru, Uganda or Ethiopia (also Decaf Brazil)

When choosing your coffee, consider its environmental impact and the farmers who produce it. We recommend you opt for beans with fair-trade, organic, or Rainforest Alliance certifications, as these labels ensure ethical and eco-friendly practices.
However, remember that smaller roasteries might not always have these labels due to high certification costs, even though they may still use organically grown fair-trade beans.
This is why Direct Trade sourcing is now the preferred ethical option for small roasteries, often resulting in
the best deal for coffee farmers. Choosing the proper coffee is not just about flavour—it's about making a choice that aligns with your values and enhances your coffee experience.
What's more, we are committed to building a better world, with a portion of our proceeds going straight back into the local communities where we source our coffee.

Coffee beans hit their flavour sweet spot within weeks of roasting, so timing is everything for enjoying the freshest cup possible. Do not be swayed by the “best by” dates on coffee bags; they may not indicate when the coffee was roasted.
We roast our beans every 4-6 weeks, ensuring your coffee is always fresh and never sitting on a shelf for months.
Leaving a bag of coffee open to the air will cause it to lose significant freshness and flavour in just 24 hours.
To keep your coffee at its best:
- Seal it tight: Store your beans in an airtight container to prevent exposure to air.
- Choose a cool, dark spot: Keep your coffee away from direct sunlight and heat.
- Skip the fridge: While it might seem like a good idea, chilling beans can introduce moisture when they come to room temperature.
By following these tips, you will keep your coffee fresher for longer!
Oil levels—Supermarket coffee and similar cheaper mass-produced coffees can be oily due to lower-quality beans and over-roasting.
While some coffee lovers prefer the intense flavour of dark roasts, the excess oil in these beans can wreak havoc on grinders within bean-to-cup machines and similar units, causing them to stop functioning altogether.
We ensure none of our coffee beans is over-roasted or oily, guaranteeing a balanced, rich flavour that works perfectly with all professional bean-to-cup coffee machines, delivering a superior coffee experience every time.
